Dr. Enrico Valli, Senior Assistant Professor at the Department of Agricultural and Food Sciences (Università di Bologna) will present a poster at the upcoming international conference 2022 AOCS Annual Meeting & Expo that will be held on May 1-4, 2022 live in Atlanta, Georgia, USA and on-line (https://annualmeeting.aocs.org/). The virtual poster will show an ongoing investigation, developed in SUSTAINOLIVE by the research teams of University of Bologna and University of Jaen, that is focused on the valorisation of the olive pomace phenolic fraction to obtain extracts, potentially usable as functional ingredients in the food industry and in other sectors. The research will continue with the set-up of the best technological conditions to obtain stable hydroalcoholic phenolic extracts and with the assessment of their stability during a shelf-life study.
